Caprese Salad

(serves 2)

Ingredients:

  • 8 slices fresh mozzarella cheese
  • 8 teaspoons (or approx ¼ cup) pesto 
  • 8 large fresh basil leaves
  • 8 slices of fresh ripe tomatoes (roma preferred); half slices are fine if using larger tomatoes
  • Salt to taste
  • Freshly ground black pepper
  • Balsamic reduction for garnish (see image on right)
  • Olive oil for drizzling

Procedure:

  1. On a large platter, assemble the salad by alternating mozzarella cheese slice, 1 teaspoon pesto, basil leaf, and tomato slice; repeat
  2. Season with salt and freshly ground black pepper
  3. Garnish with balsamic reduction
  4. Transfer portions of salad to smaller plates for serving
  5. Serve with extra olive oil for drizzling
