Caprese Salad

(serves 2)
Ingredients: - 8 slices fresh mozzarella cheese
- 8 teaspoons (or approx ¼ cup) pesto
- 8 large fresh basil leaves
- 8 slices of fresh ripe tomatoes (roma preferred); half slices are fine if using larger tomatoes
- Salt to taste
- Freshly ground black pepper
- Balsamic reduction for garnish (see image on right)
- Olive oil for drizzling
Procedure: - On a large platter, assemble the salad by alternating mozzarella cheese slice, 1 teaspoon pesto, basil leaf, and tomato slice; repeat
- Season with salt and freshly ground black pepper
- Garnish with balsamic reduction
- Transfer portions of salad to smaller plates for serving
- Serve with extra olive oil for drizzling
